Boma is an African themed restaurant in the Animal Kingdom Lodge. It is a buffet, and expensive, but the food is really really good!
There are dozens of options and even some more standard options for the picky eaters among us. But the food is so good, most people find something in the ethnic choices that they not only like, but love.
It's not as fancy as the other restaurant at the AKL, and you can usually get seating without the reservation-like things that Disney uses. Plus, see if you can get the chef's special dessert: deep fried Oreos. Yum!!
We have been there on all our trips to Disney World, and the food has been consistently good. Don't skip this restaurant just because it's off the beaten path. Yes the AKL is hard to get to compared to say Epcot, but Boma and the surrounding grounds of the hotel are fabulous.
When we plan our trips to Disney World, we always plan at least one meal at Boma. And I'd eat there every night if I could talk my party into it.
